Taste: Nutty, cacao, marzipan, slight sweetness from fruity notesThis coffee originates from Matinilla Coopelibertad in Central Valey & Tarrazú in Costa Rica about 1,200 – 2,100 metres above sea level. The cooperativo was founded as a protest by a group of small coffee growers in the Provincia de Heredia and with the assistance and advice of the National Bank in 1961 in order to improve financial and social conditions for small and mid-sized producers through the cultivation of coffee. Matinilla Fancy is one of the main trade brands for Coopelibertad produced in Matinilla, which is located in a micro-region in Escazu, Central Valley. You not only find fantastic coffee here, but also exceptional people to produce it. The coffee producers here have a long tradition of cultivation and sound knowledge of the agricultural work that the crop needs. Most producers in this area grow Caturra and Catuaí yet new varieties such as Centroamericano, Obatã and Marsellesa are becoming increasingly common. All coffee is selectively hand harvested and later transported to Moravia where the wet mill is located. Here the cherries are sorted.Coopelibertad is a Rainforest Alliance certificated organization and environmental care is a high priority. 15% of the land is under conservation, and Coopelibertad also has a number of programmes to protect water, rivers, soil and to prevent contamination. Coopelibertad also focuses heavily on the rights of its members ensuring basic privileges such as social security and safe working conditions and health care programs.Coopelibertad plays a huge role in agricultural extension services such as soil analysis every two years, and ICAFE advises on inputs and composition. The cooperative provides advice for every aspect of coffee cultivation, from improving soil Ph. to organic compost recipes and applications.
